WTF – I assume it is somewhat cooked if the meat came off like that but do the fish some respect and kill it first.
I have no problem with eating fish but be respectful.
On the other hand its less messed up than the $#&%heads that kill 55 gal. drums of fish (carp and native roughfish alike) and then toss them in the trash – that really chaps my hide…
actually I take that back – it might be just cut (alive) instead of cooked. eating freshwater fish raw is no good. Still – hard to take, even if there are equally disturbing things out there…
Definitely looks like you know your stuff when it comes to food after reading through your blog (great reads btw), so don’t want to be that know-nothing trying to argue with you! But doesn’t the tail look kinda crispy?

Yeah you’re right – I guess I’d say not raw but probably a little rare…
If I had to hazard a guess (after the third disturbing viewing), I’d say open flame to blacken the outside (I’d guess a torch since the head is untouched)
then several cuts (you can see some of them) to allow the user to pull off the pieces of meat. The pieces seem to come out in thin, consitant parts. Something you’d expect of a knife cut – not a a random tear with chop sticks.
